Ageing

12 months in oak barrels. 1/3 in new oak, 1/3 in second use barrels, 1/3 in third use barrels.

 

Tasting Note

A complex nose with berry fruit, spices and hints of pepper. Nicely balanced with soft tannins.  Serve at 16-18°C. Drink within 8 years.

 

Food pairing

Lamb, stews, mountain cheeses.
